Mint Cilantro Chutney

(mint raita)
Prep Time: 15 Mins
Yields: 1.5 cups

Ingredients:
1.5 cups firmly packed chopped fresh cilantro leaves
1/2 cup   firmly packed chopped fresh mint leaves
1-2 hot green chilis (Thai, Serrano) coarsely chopped - to taste
1.5 inches fresh ginger, peeled and chopped
1/2 red onion coarsely chopped
2 cloves garlic peeled and chopped
1/4 cup freshly squeezed lime juice
1/2 cup plain yogurt (optional)
Salt to taste

Method:
Combine all ingredients except lime juice and salt into blender or food processor.
I recommend adding only some of the chili at this point.
Blend to smooth (you may need to add a little water)
Season with lime juice, salt and more chilis to taste.

If you want it to turn out creamy like a raita, use the yogurt.

Serve with Aloo Paratha
